Daily Eats #3
Hi, there! I’m back with another installment of my daily eats series, where I share examples of meals or snacks I’ve had lately for inspiration and ideas. Typically, I share 1 full day’s worth of eats. But today I’m doing something a little different! I’m sharing some particularly good meals I’ve had lately and chatting about what I’ve been up to.
Remember, I don’t prescribe or promote any one way of eating or any “diet” per se. I eat what makes me feel good & what I like eating. Or what I’m craving, needing, or wanting in the moment. I just try to be mindful of what I really want to eat & why. And if I mindfully choose to eat something, I truly enjoy and savor it.
So, with that, here are some daily eats examples of some delicious things I’ve had lately…
These delicious broccolini and potato samosas from Blue Apron
I was so excited when these bad boys showed up in my Blue Apron kit a few weeks ago. They were SO good! The samosas were paired with these delicious coconut lentils, too. They had so much flavor! Although they weren’t authentic Indian, I thought it was a great twist on an Indian classic I love.
I’ve ordered Blue Apron boxes for about the last month. Since I’m so focused on the business & working with my health coaching clients right now, I wanted to take some of the guess work out of meal planning for a little bit.
I also wanted to get some cooking inspiration and ideas. I feel like I’ve gotten back to a place where I want to just cook what I feel like, so I think I’ll pause my orders for a little while.
Frozen Fruit for Dessert
This is a shot from a typical late-night Whole Foods run for me. Some Suja, sparkling water, and frozen fruit 😊
Ever since I was a kid, I have loved eating frozen fruit as dessert. I know, I know… weird! The best combo? Frozen peaches and frozen cherries. I put some in a mug and eat it as dessert a few nights a week while we catch up on Billions, Modern Family, Girls, or This is Us 😊 What have you guys watched lately?
The most amazing Coconut ‘Bacon’ BLT (@Heart Beet Kitchen)
I enjoyed this sandwich yesterday while I did some work at a local plant-based cafe. I can only work from home so much until I get a little stir crazy! Do you get cabin fever if you spend too much time at home? I know I do!
I go to Heart Beet Kitchen (one of my favs!) all the time, but for some reason had never tried the Coconut Bacon BLT before. If you live near Philly or South Jersey, you HAVE TO GO! This sandwich, and everything else there, is seriously amazing.
Heart Beet’s BLT has coconut bacon (which, if you’ve never tried it, is amazing), greens, tomato, smashed avocado, and lemon-garlic aioli on this delicious gluten-free bread. It’s so good!
*By the way* If you live in the area, check out Heart Beet’s new breakfast menu! They offer breakfast on Monday-Friday now starting at 7am. I can’t wait to check it out. If the breakfast dishes are anything like what else I’ve had there, it will be great.
Almond Milk Latte (ala my Vitamix)
This is nothing fancy, and I wasn’t sure if it was even worth sharing, but hey – maybe somebody else out there wants to make a quick latte without an espresso machine too, right?!
I threw 2 shots of espresso + 1 cup of almond milk + 1 sprinkle of cinnamon + 1 tsp of coconut oil in my Vitamix for 3 minutes. And voila! I got this frothy, ‘creamy’ latte ☕️
Udon Noodle Soup w. Soft Boiled Eggs
This delicious udon noodle soup came in my Blue Apron box this week. I’ve had networking events every night this week so far, so I’ve had to use a few of my Blue Apron meals as lunches instead.
There are things I love and don’t love about Blue Apron. One of the things I do love is that I learn new things from cooking their meals. I make hardboiled eggs all the time, but I never really knew how to make soft boiled eggs before BA.
Want to learn? It’s so easy! To make soft boiled eggs, just bring a small pot of water to a boil. Once the water begins to boil, carefully drop the eggs in. Cook for 7 mins. with the burner still on (I’m mentioning this because with hardboiled you turn it off). Rinse under cold water for 1 minute. Once cool, carefully peel. I usually let them rest for a few minutes before cutting. Enjoy!
Vegan Beet Soup (@Heart Beet Kitchen)
Even though I didn’t get a good picture of it, I have to share this amazing beet soup from Heart Beet Kitchen in Westmont. I had it after I hosted a workshop there a couple of weeks ago & loved it! All of their soups are great, actually.
I’ve hosted 2 workshops at Heart Beet so far & have really loved doing it! I’ve met so many nice people & gotten to chat with everyone about some of their favorite health topics like sugar & gut health.
Last but not least… a Friday afternoon treat w/ my hubby
I’m working really hard these days (aren’t we all?!) and sometimes have to remember to take my foot off the gas a bit. Ryan and I try to take little breaks during the week to spend some time together, and then we get back to work.
Around Valentine’s Day, we walked to our downtown and grabbed homemade dark chocolate covered strawberries & coffee together. I got an earl grey latte with coconut milk (aka. a London Fog!) since it was mid-afternoon. If I have too much caffeine past lunch, I get crazy 😜
