Daily Eats #4
Hi, there! I hope you’re having a great week. I’m back with another round of my Daily Eats series (you can read more here, here, and here). I try to post a few days’ worth of meals as inspiration and ideas to share with you. Don’t forget — this is just my way of eating, and just 1 example of healthy eating, not THE way.
I pride myself on setting a healthy example because of HOW I eat, not WHAT I eat. How do I eat? Pretty intuitively / mindfully. I pretty much eat anything I want, but I’m mindful of what I’m craving and why.
I’m also mindful of what my body needs at the moment, and right now it’s asking me for some anti-inflammatory foods. I’ve had this nagging neck pain for MONTHS (!!!) and I’m trying to bring down some of the inflammation through lifestyle choices (diet + exercise + yoga + physical therapy = a happier Sam).
People ask me all the time whether I’m paleo, vegan, vegetarian, gluten-free, etc. I think they’re surprised to hear me say I don’t follow any specific diet or way of eating.
I just try to eat like a PRO (which I learned about from my blogger-friend, Gina). I focus on PROduce and PROtein, whether it’s plant-based or not. I simply try to eat nutrient-dense foods as often as possible, & thoroughly indulge and enjoy treats when I want them.
So let’s get down to it, shall we?
Yesterday started with some simple blueberry oats. To make this, I brought 1 3/4 cup of unsweetened almond milk to a boil and then added 1 cup of rolled oats. I cooked the oats for ~5 minutes (until the liquid cooked off) and then added frozen blueberries, almond slices, cinnamon, vanilla extract, and 1 Tbl. of chia seeds. So simple & so delicious!
I got down to work early yesterday morning, responding to emails, writing my weekly newsletter to my Hygge Tribe (get on it here!), content for the blog, and creating this Healthy Breakfast Recipe guide.

Ryan & I felt like we needed to get out for a little bit, so we headed to his favorite place — Chipotle — for lunch.
I ordered a chicken burrito bowl (brown rice, pinto beans, veggies, chicken, mild + hot + corn salsas, lettuce, and guac). I always get the same thing. If ain’t broke, don’t fix it 😉
After lunch, we went for a quick walk. If it’s nice out, I try to fit in movement throughout my day. That might mean I take a 10 minute walk in the morning, a 15 minute walk at lunch, and do some stretches or yoga at night. But that’s what works for me right now!
I grabbed a mid-afternoon snack of unsweetened dried apple rings & raw almonds (both from Trader Joe’s!). It really hits the spot!
I worked the rest of the afternoon until Ryan and I left to meet family out for dinner at Anthony’s Coal Fired Pizza. We love it there! Do you have one near you? If so, you have to go! They’re all over the East Coast.
Since I’m on this anti-inflammatory kick (seriously guys – I’m desperate) I ordered the Italian Salad, which has romaine, hard boiled egg, red onions, chickpeas, olives, tomatoes, and celery in a red wine vinegarette. It’s SO good! I ordered a side of tuna salad (which is so good because they make it with EVOO & red wine vinegar instead of mayo) to go with it for some extra PROtein.
I try not to have my phone out when I’m out to eat with family or friends, so I didn’t take a picture. But I nabbed this from their website:
After dinner, I went home and worked some more until closing up shop at about 8:15pm. After that, I took some time to make my favorite nighttime tea, read a magazine (my favorite way to unwind!), and watch HGTV (aka. zone out).
We watched Sunday’s Billions episode before heading off to sleep (<— such a great episode!). And that’s a wrap!
